Hearty Feta Cheese Filled Poached Chicken with Winter Fruit Salad ( Serves Four )
Ingredients Qnty
Chicken Breast 04 nos.
Feta Cheese 120 gms.
Blanched Spinach Leaves 80 gms.
Marinade :
Lemon Juice 02 lemon
Salt to taste
White Pepper Powder to taste
Honey 20 ml
Lemon Grass Powder a pinch
Salad Oil 40ml
For the bed :
Diced Exotic Fruits 480 gms
Maraschino Cherry Few
Lemon Juice 01 lemon
Honey 20 ml
Basil Leaf A few sprigs
Method :
- Slice open the chicken breasts. Beat them lightly. Keep in marinade for 10 mins.
- Spread the breasts flat on oiled cling film.
- Arrange previously softened feta cheese and the spinach leaves.
- Roll the breast along with the cling film into nice and tight cylinders.
- Wrap them with aluminium foil and poach for 10 mins. Cool and then chill immediately.
- Slice them up and arrange on the bed of exotic fruits. Serve Cold.
