Refreshing Recipe - Salt Roast Chicken





Salt Roast Chicken – Serves Two

Ingredients

Whole Fresh Chicken ( 01 kg bird)   01 no.
Celery Salt                                          01 tsp
Garlic Paste                                        30 gms
Ginger Paste                                       10 gms
Lemon Juice                                       01 lemon
Light Soy Sauce                                  30 ml
H P Sauce                                           30 ml
Red Chilli Sauce                                 30 ml
Chinese Cooking Wine                      30 ml
Cooking Oil                                        60 ml
Brown Sugar                                       ½ tsp
Lemon Salt Crystals                           to sprinkle generously

Preparation

·         Clean the chicken, pat dry and marinade with the salt, lemon juice, ginger, garlic pastes.
·         Leave the bird to rest for 30 mins.
·         Marinade with the rest of the ingredients except the crystals and leave the bird to rest for further 02 hrs.
·         Prop the bird on the bed of roughly cut aromats( onions, bayleaf, cloves, carrots, celery, leeks ). Sprinkle  with the salt crystals.
·         Bake in a pre- heated oven at 160 degree C for 45 mins.
·         Celebrate hot with vegetables, noodles or rice.

Refreshing Recipe - Oriental Bowl






Oriental Bowl ( Serves 04 )

Ingredients

White Fungus ( Cleaned and Soaked )                   60 gms           
Exotic Oriental Veggies ( Sliced )                          100 gms
Vegetable Stock                                                      500 ml
Kafir Lime Leaf                                                        02 nos
Galangal ( Sliced)                                                     08 gms
Shallots( Sliced)                                                        20 gms
Black Peppercorn ( Crushed )                                  a generous pinch
Salt                                                                             to taste

Preparation 

Add all the ingredients to the vegetable stock and simmer for 08-10 minutes. 
Remove the scum that may appear on the top. 
Serve immediately.

Refreshing Recipe - Skillet grilled sweet corn patties








Thot man khao phot, skillet grilled sweet corn patties ( Serves 04 )

Ingredients

Sweet Corn Kernels                                         400 gms
Chopped Lemon Grass                                     01 table spoon                                     
Corn Flour                                                         02 table spoon
Chopped Spring Onion                                     01 table spoon
Chopped Holy Basil                                         01 table spoon
Chopped Fresh Red Chilli ( Deseeded)          01 tea spoon
Salt                                                                    to taste
Refined Oil                                                       to grill

Preparation 

  • Drain at pat dry the kernels.
  • Mash the soft sweet corn kernels with the back of a spoon or lightly in a blender till coarse.
  • Mix all the other ingredients together except the oil.
  • Divide into small roundels.
  • Flatten and grill them on a non stick pan till crispy from the outside.
  • Serve hot accompanied with thai sweet-chilli sauce.
